All I used was shredded kumaras, finely chopped spring onion, cajun pepper (to make it nice and really spicy!), salt, black pepper and some flour. Put some Oliviani butter in a frying pan on medium heat and squeezed handfuls of kumara mixture together and flattened into pattie shape. Cooked until golden brown on the bottom (but was careful with not flipping them too earlu as they probably would've break otherwise!), flip and cook the other side until golden.
I always wonder why birds stay in the same place when they can fly anywhere on Earth. But then I ask myself the same question. Yep - I am a travelling vegan, originally from Linköping. Oh you lovely kumara
I craved hash browns ALL day yesterday, came home in the evening, looked through the whole kitchen for potatoes, only found kumaras and thought why the heck not. I've never made hash browns before, so I thought it was gonna be a mission but it was so easy, and NO, you don't need egg to keep the patties together.
