Quinoa mince - a vegan option for mince meat!


You'll need:
1,5 cup quinoa 
1 tablespoon olive oil
1 large onion, finely chopped 
1 large carrot, grated
1-2 cups cabbage, finely chopped 
1 large chili, finely chopped
1 tablespoon dried oregano
1 tablespoon tomato paste
1 tablespoon soy sauce
2 tablespoons water
2 garlic cloves, peeled and pressed
4 tomatoes, cut in chunks

Make it: 
Boil the quinoa according to the instructions on the pack. Put some oil in a frying pan on medium heat, and fill with the onion, carrot, cabbage, chili and oregano. Stir well for a few minutes until the veggies soften.
Add the boiled quinoa, the tomato paste, soy sauce, water and garlic, stir around for another few minutes. 
Lastly, add the tomatoes, give it a good stir and let it fry for about 4 minutes before you eat.
