Falafel with yummy mean and green pea sauce

Even though I've been a vegan for almost 4 years, even though I've tried it (and reviewed it) in so many different parts of the world and even though I had it for lunch from the local street food place almost every day at uni, I still haven't ever made falafel from scratch. Which makes me think - what have given me the right to say so much about falafel in the past?

So today I though I was gonna do something about this when I found a good recipe in Trishs cookbook"Dr Libby's Real Food Kitchen".


I always thought making them myself can't be too hard, but making patties of any kind never strikes me as particular easy for some reason.. 



But after a few sweaty hours in the kitchen I made it and they turned out to be really good! (Even though they didn't look like the once on the photo in the cookbook at all..)


I also did another first timer tonight when I cooked Amaranth - a gluten free super grain packed with protein, magnesium, calcium, fiber and other good nutritions. It's almost like Couscous but more juicy.

To make the dinner more coulorful I made a salad with yellow pepper, cucumber and lettuce with a dressing made of olive oil, cinnamon, lemon juice and a pinch of salt and pepper. 

And, as the cherry on top, I made a yummy, pretty green coloured pea sauce. I wanted to call it pea hummus, but realized that I didn't actually use anything that is usually involved in a hummus.. Anyway. Down below is the recipe :)

Mean and green pea sauce


You'll need:
2 cups frozen peas
A handful fresh basil leaves
A few fresh mint leaves
Juice from 1 lemon
1 Table spoon flax seed oil
Salt 
Black pepper

Make it:
Put all the ingredients except for the salt and pepper in a blender and mix until smooth. Sprinkle and mix with as much salt and pepper as you wish - done!
