The best start of the day - a vegan superfood breakfast

They say that breakfast is the most important meal of the day, a fact that I love as breakfast is my favourite meal!

The last few days I've had a real nutritious, superfood breakfast that makes gives me loads of energy and makes me feel full for several hours: chia seed and oat meal porridge!
(With the mandatory morning coffee and this super delicious drink: Coconut water with chocolate flavour) 

Chia seeds is a very good nutrition source for vegans as it's loaded with Omega 3, protein and kalcium - a real nutrion hero!


Chia seed and oat porridge
For 1 person

You'll need:
3 table spoons chia seeds
2 table spoons oats
2 tea spoons cinnamon
A pinch of salt
3 table spoons pumpkin seeds
2 table spoons sunflower seeds
Oat milk 
Raisins, fresh fruit 

Make it: 
Stir the chia seeds in a bowl together with the oats, cinnamon and salt. Add some boiled water and stir around so it gets into a sticky, jelly like texture. Add more water according to taste. Leave it for a few minutes so it softens and then add the pumpkin seeds, sunflower seeds and some oat milk so it's not too dry. Top with some raisin, or other dried fruit, and fresh fruit like banana or apple pieces. 

So simpel. So yummy. So healthy!
